Some of the meat here, like the ribeye, is USDA Prime, which comes off the grill with a satisfying char yet still perfectly medium-rare.<\/p>\n<p>Meanwhile, Los Cholos&#8217; prime arrachera tacos here are the quintessential taqueria headliner.\u00a0Roughly chopped and heavily charred, these tacos are among the best of their genre. Also good are the nicely crisped cecina tacos, which are made with thin strips of air-dried beef, which needs only a minute on the grill.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n\n<aside class=\"related right\">\n<h2 class=\"widget-title\">More from Brad A.
