Now, that savory perfume has found another new home along downtown Santa Ana\u2019s Fourth Street corridor.<\/p>\n<p>Marking its fifth location, the lauded taqueria officially opened its doors on Dec. 22, located on the ground floor of the eight-story Rafferty building, brining new energy to the thoroughfare that\u2019s currently <a href=\"https:\/\/www.ocregister.com\/2026\/01\/02\/busy-2026-oc-streetcar-prepares-for-riders-freeway-projects-hope-to-address-key-bottlenecks\/\" target=\"_blank\" rel=\"noopener\">undergoing a transformation<\/a>.<\/p>\n<div style=\"border-top: 1px solid #999;border-bottom: 1px solid #999;padding: .5em\">Hungry? Sign up for The Eat Index, our weekly food newsletter, and find out where to eat and get the latest restaurant happenings in Orange County. <a style=\"color: red\" href=\"\/newsletter\">Subscribe here<\/a>.<\/div>\n<p>For co-founder and co-chef Josue Maldonado, planting a flag in the Orange County city with the largest Latino population wasn\u2019t just about expansion, but also about preservation.<\/p>\n<p>The original Tacos Los Cholos <a href=\"https:\/\/www.ocregister.com\/2021\/06\/01\/taco-tuesday-mesquite-grilled-usda-prime-ribeye-tacos-anyone\/\" target=\"_blank\" rel=\"noopener\">opened in Anaheim in 2019<\/a>. Surviving the pandemic, the taqueria opened its second location in Fullerton. Maldonado and his business partner, co-founder and co-chef Michael Alvarado, followed with spots in Huntington Beach and Huntington Park in Los Angeles County. Fans of the taqueria know it for its ingredients and dishes (carne asada tacos, Anaheim burritos and handmade tortillas, to name a few) often served in casual, high-energy settings. But the new Santa Ana location leans into a more polished aesthetic.<\/p>\n<p>\u201cIt\u2019s a more upscale feel here,\u201d noted Maldonado, comparing the brand-new build to their older spaces.<\/p>\n<p>Despite the snappy interiors, replete with a mural, crimson paint and a wall of soaring floor-to-ceiling windows (ideal for people watching while adding heaps of natural light to the space), the soul of Tacos Los Cholos remains untouched. \u201cThe style of cooking, the way we cook and serve, is the same,\u201d he said.<\/p>\n<p><em><strong>ALSO READ:<\/strong><\/em> <a href=\"https:\/\/www.ocregister.com\/2025\/12\/31\/7-orange-county-mocktail-spots-to-try-for-dry-january\/\" target=\"_blank\" rel=\"noopener\">7 Orange County mocktail spots to try for Dry January<\/a><\/p>\n<p>The focus is still on the fire and food, which are both open for diners to watch in action care of the visible Santa Maria grill anchoring the behind-the-counter scene. Menu items include meat-heavy tacos (the carne asada or chorizo are musts), the unique Anaheim taco, quesadillas, a loaded papa loka (a Mexican-style \u201cloaded baked potato\u201d), mulita, the Cholo pizza and burritos. Meats include more than a dozen options, including a \u201cprime\u201d section with such heavy hitters as filet mignon, ribeye and <em>mar y tierra<\/em>.
